Menu for pancreatitis

Pancreatitis is a disease of the pancreas, during which the cells of the organ are destroyed by its own enzymes. In the exacerbation phase, the gland cells are destroyed, in the remission phase, connective tissue is formed at the site of the dead cells. This severely impairs the functioning of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, and therefore treatment should begin with eating.

Nutritional recommendations for each patient should be selected individually, depending on the severity of the condition, the stage of the disease, food intolerance and comorbidities. The menu below for pantheitis is appropriate for the remission phase (ie the period when there is no exacerbation) and will help to avoid the next exacerbation.

The main principles of the menu in pancreatitis:

  1. The purpose of the diet is to improve the work of the pancreas, to reduce the load on the digestive system.
  2. Limit simple carbohydrates - pastries, baked goods, sugar. The sugar is partially replaced by xylitol or sorbitol. Of pastries allowed - jam, honey, jam.
  3. The fractional diet - 5-6 times a day.
  4. Cooking - steamed, baked and boiled. It is necessary to wipe the tough meat and vegetables rich in dietary fiber (carrots, broccoli, cabbage, fresh herbs).
  5. The temperature of the dishes is normal, cold dishes are excluded.
  6. During the remission period, the menu may include vegetable and grain soups in the diet. At the same time, the vegetables must be well cooked.
  7. You can use meat, skinless poultry, low-fat varieties of fish, cooked and baked. Do not use offal (liver, kidneys, brains), smoked meats, salted fish, caviar, sausages, canned food.
  8. Of the permitted dairy products - cottage cheese (up to 20%), milk, yogurt, sour cream in dishes.
  9. Eggs are recommended to be used in the form of omelets or soft-boiled. It is better not to use fried eggs or hard-boiled eggs.
  10. In the stage of remission with pancreatitis it is necessary to include various vegetables and fruits in the diet in raw, baked, cooked, stewed form. Fresh vegetables and fruits are excluded during the exacerbation.
  11. Drinks - weak tea, coffee with milk, rosehip broth and fruit drinks, half diluted with water, fruit juices without sugar. Excluded - black coffee, cocoa, carbonated drinks.
  12. Do not use foods that stimulate the digestive system: spinach, sorrel, radishes, radishes, garlic, mushrooms, pickles, pickles.

Breakfast:sweet pilaf with dried fruits;

Dinner:chicken noodle soup; zucchini and eggplant baked in the oven with cheese;

Snack:milk shake with strawberries and banana;

Dinner:flounder fillet in the oven.

Nutritionist's comment:

To make sweet pilaf suitable for a patient with pancreatitis, exclude nuts, cranberries and reduce the amount of sugar to 1 tbsp.

Add vegetables to the soup without frying, this will reduce the load on the pancreas.

Spicy spices should be excluded from recipes.

I recommend choosing a cocktail milk with a fat content of not more than 2, 5%, and as for coffee, it is better to exclude it from the recipe, it is not recommended to use this product with pancreatitis.

You can use any of the methods for making flounder fillets, both of which are good in case of illness. You can choose a side dish with grain, such as boiled buckwheat or vegetables - cauliflower, broccoli, potatoes, zucchini and more. Choose a method of cooking vegetables that does not overshadow the taste of the fish or cause deterioration, for example, boil or steam the vegetables.
